I am always experimenting with recipes and food, creating fabs and flops!
So whenever I use a recipe from somewhere other then out of my head, and I blog about it, I will always do my best to acknowledge the original creators.
Plain Bread Dough
I highly recommend following the measurements described by your individual breadmaker for the best results with your machine.
I only use my breadmaker to knead the dough and then I mould it and bake it in a 200 degree Celcius oven.
Here is the basic recipe I use as a base and I alter it with spices, herbs, bacon, cheeses, etc. Just make sure if your adding a liquid minus the same amount from your water, that also includes adjusting for wet ingredients. The mixture should feel tacky but not stick to your fingers.
White bread dough
350ml Water
700g Defiance breadmix
1 1/4 teaspoons of yeast
1 teaspoon of bread improver
Generous pinch of salt
Load into your machine as suggested (normally water first)
Select dough mix on machine - generally the longer the knead the better the rise. Makes a 1kg loaf, two short french loaves, 10 small to medium bread rolls and anything else your imagination comes up with.
Once the dough is finished in the breadmaker, take it out and mold into desired shape. Place on a tray lined with baking paper, cover with either Glad Wrap or a damp tea-towel and place in a warm spot for 30 mins or doubled in size. I have trouble with mine rising so I pre-warm the oven and sit the tray on top of the stove, this is normally warm enough.
In a 200 degree Celcius oven bake for 15 - 20 mins, the bread is done when you tap on it and it sounds hollow.
Wholemeal/Grain bread dough
420ml Water
680g Defiance breadmix
1 1/4 teaspoons of yeast
1 teaspoon of bread improver
Generous pinch of salt
Same process as above for both the molding and cooking.

Pizza Dough Mix
This is a basic recipe designed for a bread maker with a
dough setting and is honestly the best pizza base ever!!
Ingredients
- 290 mls lukewarm water
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1 teaspoon of sugar
- 3 cups of plain flour
- 2 1/2 teaspoons instant dried yeast
- Place all ingredients in the bread maker in order listed.
- Set the machine to dough setting.
- On completion, remove dough from bread maker and divide into 2 portions. On a lightly floured surface roll each portion into a 25 cm circle and place onto greased pizza trays.
- Spread pizza with your favorite toppings. Place in a 220C/200C fan-forced ove for 15 mins or until cooked.
